Swooning over Swine

My beloved Yardbird lives approximately 100 feet from my apartment in South Beach and now Swine Southern Table & Bar is moving in across the street from my Coral Gables office. I’m starting to think the people at 50 Eggs Inc. are following me and I’m not complaining!

This Saturday, Swine will open their doors in the heart of Coral Gables and introduce their innovative and mind blowing culinary style to their already infamous Southern cuisine, this time with a menu focused on the noble hog.

Serving up creative takes on classic Southern favorites, the menu at Swine features heritage breed pigs and local farm-sourced produce as well as regional fish and fowl. Menu items include Bourbon Molasses Cured Pork Jowls, Smoked Berkshire Spare Ribs with a Carolina Mop, a Black Bean Spice Rubbed Ossabaw Chop with Mofongo Butter, Sorghum and Cider Brined Guinea Hen with Crispy Black-Eyed Peas as well as dishes featuring Local Suckling Pig, Russian Wild Boar, Texas Antelope and Mississippi Quail. All are paired with an ever-changing litany of seasonally inspired side dishes and traditional Southern desserts.

Wondering how you’ll wash down this already indulgent menu? Swine Southern Table & Bar will be streamlining 50 Eggs’ already notable bourbon reputation with extensive bourbon collection featuring rare, limited editions and house infusions, in addition to an inventive, culinary-driven cocktail menu…and there is nothing I love more than washing down a plate full of pig with some infused cocktails! Nashville, TN

I spent a few days in Tennessee this week and made sure to hit up Arnold’s Country Kitchen in Nashville. First saw this place on the Old Time Attitude episode of Diners, Drive-ins and Dives. Voted the Best Meat and 3 anywhere, Arnold’s lived up to that reputation and I was very satisfied. Went on a Monday and got the fried chicken with macaroni and cheese, greens, mashed potatoes and gravy, cornbread and chocolate pie.
